About Chef Noah Gaston
Noah's expansive and diverse style is the result of living in and experiencing different cultures throughout the United States. From the Hispanic, Cajun influences of Texas, to the Pacific seafood and organic styles of Northern California, the all-encompassing Chicago - home of Taste of Chicago (the world's largest food fair) to the traditional, Atlantic seafood styles of Northern New England. Noah has experienced the heart and fullness of American (global) food and culture.

Because of Noah's innovative fusion of classic cuisine, he has acquired the honor of wining Portland Maine's Golden Skillet award for two consecutive years. He has worked at many of Portland's finest restaurants and eateries (Portland was named America's foodiest small town by Bon Appétit magazine in 2009) and now showcases his culinary talents as chef for our intimate dining experience at 91 South in Gorham.

Noah explains that his passion for food is fueled by his passion for art and people. "Cuisine is the primary gateway into another culture and a form of art..... at 91 South we fuse them to bring it all together”.
